Cutting Broccoli Florets

Follow these steps to quickly and easily cut a bunch of broccoli into florets.


What You'll Need:

Step 1

Rinse your broccoli bunch under cool water and shake off excess water. Flip your broccoli upside down so the crown (top) rests against your cutting board.



Step 2

Use a chef's knife to cut through the stalk of the broccoli, slowly turning your broccoli bunch in a circle as you go.


Step 3

Set your broccoli stem aside (but don't throw it away!). Follow your recipe directions from here; if your recipe says to cut into florets you can probably keep your broccoli pieces a bit on the larger size; if it says bite-sized pieces you may want to cut your florets in half or smaller. If I get any really bit pieces (like the one on top below), I would definitely cut those down a bit further.


Step 4

You can eat the stalks!! Waste not, want not. Use a vegetable peeler to remove the woody layer on the stalk, or if there are quite a few knobs use your chef's knife to simply cut off the four sides of the stalk, squaring it off. Slice into approximately 1/4-inch pieces (my kids call these broccoli coins).
