The Recipe:
Ingredients:
1/2 cup plain Greek yogurt (see dairy-free suggestion just below recipe)
1 tablespoon prepared horseradish
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Procedure:
Combine all ingredients together in a small bowl.
Taste, and adjust all ingredients to your liking.
To Serve: My favorite food to serve this spicy sauce with is steak. I will always put a dish of it out when we have steak kebabs, steak fondue or reverse-seared steaks. It is also delicious over roasted or grilled vegetables.
Adjusting for your diet: If you do not consume dairy, you could try using a dairy-free Greek yogurt. You could also try using a vegan sour cream. I haven't personally done this, so if you try it out I'd love to know what you think!
Tips:
This recipe is really all about your taste preferences. I like a nice spicy sauce, so if you make the recipe as written above, it does have a good amount of kick. If you are a bit unsure, I'd suggest cutting the horseradish down to 1-2 teaspoons to start and working from there. I ALWAYS taste this sauce, every time I make it, and keep adjusting the flavors until they taste just right. One great thing about this sauce is it's super easy to fix! If you added too much salt, just add bit more of everything else to balance it out. If you find you've made it too spicy, just add a bit more yogurt to counter.
I've also made this sauce using sour cream and it turns out great. I like the slightly thicker texture of Greek yogurt (plus it has some health benefits such as being a good source of protein and supporting gut health), so if I have that on hand it's my first choice for this sauce.
The Story:
I am a HUGE fan of horseradish. I like spicy things in general, but horseradish is on another level, in my opinion. I love taking a big bite of something coated in this creamy, peppery sauce and relishing in the kung-fu kick the horseradish gives my mouth.
Horseradish is actually a root, like ginger (the word radish comes from the Latin word "radix," which means root). Horseradish can help reduce inflammation and improve respiratory health. Although you can buy the raw horseradish root, I don't usually see it in grocery stores around my area of Minnesota, so I opt for the prepared horseradish, which is just the grated root mixed with a little water, vinegar, and salt to preserve it.
I love serving this sauce with steak, and I've been asked for the recipe numerous times by friends who also enjoy it's creamy, cool, spicy taste.
